Blueberry Muffin Breakfast Cupcakes Tips

The best part of the weekend is when it’s over and you come home to a nice hot breakfast made by your partner with blueberry muffins in every bite. Now you can enjoy that sweet, warm taste in cupcake form!

Blueberry Muffin Breakfast Cupcakes are small, moist muffins that are topped with cinnamon and sugar and then baked until golden brown. They’re perfect for breakfast or dessert. The recipe doesn’t make many muffins so it’s worth it to make them for dessert.

Preheat your oven to 350F (175C). Line a muffin tin (or cupcake tins) with cupcake liners.

Ingredients

1 cup (125g) all-purpose flour

1/2 teaspoon baking powder

2/3 cup (140g) sugar

1/4 teaspoon salt

1 large egg, beaten lightly with a fork

1/3 cup buttermilk, shaken well in a measuring cup (75ml) or 1 tablespoon white vinegar mixed into 1 cup of milk. If you’re using buttermilk, add the liquid to the dry ingredients without separating them.

1/4 cup (31g) dried blueberries

Instructions

Whisk together the flour, baking powder, and salt in a mixing bowl. In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the egg to the butter-sugar mixture and beat until thoroughly blended. Add half of the flour mixture to the butter-sugar mixture and mix until just blended. Do not overmix. Add the buttermilk and beat until just combined, then add the rest of the flour mixture. Mix just enough to blend everything. You can also mix using a stand mixer. Just add the dry ingredients to your mixer’s bowl and buzz along on a low speed in 2-3 batches until everything is smooth. Stop and scrape the sides of the bowl. That’s it!

In a small bowl, mix the blueberries with a fork until they are evenly dispersed. Sprinkle the blueberries evenly over the muffins (about 4 tablespoons). Bake for 20-25 minutes or until golden brown. Let cool completely before removing from pan and serving.

Makes approximately 24 muffins.
